Apple and Garlic Skillet Potatoes

Well, today was Aaron’s first day of graduate school. He only had one class that lasted about an hour—but it was a first day nonetheless. It also seems that he forgot to bring a pen on his fist day.

He was totally that guy.

For posterity’s sake, I decided to document the occasion.

Now, onto the potatoes!

I’m not sure if you know this—but when apples, garlic and potatoes meet in a skillet it’s close to magical. This is one of my favorite ways to cook up potatoes.

Better yet, you can add just about anything to this base. We’ve been known to add sausage and eggs for a breakfast scramble. You can also add chicken and a sprinkling of cheese for a main dish.

Or you can have it just as it is—a glorious and simple combination of sweet and savory.

Apple and Garlic Skillet Potatoes

5-6 white or Yukon gold potatoes, quartered and sliced

1 apple of your choice, quartered and sliced

1 garlic clove, minced

2-3 tablespoons vegetable oil

1 teaspoon parsley

Salt and freshly ground pepper

Start by microwaving the potatoes with the oil for about 7 minutes—just until they begin to soften. Add the cooked potatoes to a large frying pan over medium heat. When the potatoes are beginning to turn a golden brown add the apple slices, garlic and seasonings. Continue to cook, stirring occasionally, until evenly browned.
