Happy Pi Day!
The week surrounding March 14 is always good in the food blog world. There is pie, pie and more pie. I was particularly excited this year to take part in the celebration. After all, who doesn’t like a good pie?!
Lately, summer has been feeling awfully close (although there was a weird snow storm today, followed by sunshine and then hail). And with summer, comes one of my absolute favorite treats.
S’mores!
Campfires are slightly hard to come by at the moment, so I turned this treat into a fancy pants pie. It’s good—gooey, browned marshmallows top a velvety smooth, rich chocolate ganache and all inside a buttery graham cracker crust.
You’ll like it. I promise.
S’more Pie
Crust:
12 graham crackers (pounded or processed into crumbs)
6 tablespoons melted butter
3 tablespoons sugar
Pinch of salt
Preheat the oven to 400°F. Combine the above ingredients and press into a pie pan. Bake for 12 minutes and cool on a wire rack.
Filling:
1 1/4 cups heavy cream
8 ounces dark chocolate, finely chopped
Place chopped chocolate in a medium sized, heat proof bowl. In a small saucepan, bring cream just to a boil. Pour cream over chocolate and let stand for 10 minutes. After the 10 minutes, whisk mixture until smooth and a rich brown. Pour into graham cracker crust.
Let sit at least an hour to set.
Topping:
Mini-marshmallows
Turn the oven to broil. Heap the marshmallows on the chocolate. Place in oven for a few seconds to brown the marshmallows. Do not turn your back on this and be ready with your oven mitt because it can burn super fast.
There you have it. A taste of summer in a cute little pie.
