Cereal Bars with Cranberries

Cereal mixed with marshmallows. It’s easy. It’s versatile. It’s delicious.

While Rice Crispy Treats are the traditional go-to, these are a great alternative. The marshmallow, cheerio and cranberry combination is surprisingly sweet and a little tart.

Side note: The cereal bars are pretty sticky. Be sure to spray your wax paper with Pam. It also helps to spray your knife prior to cutting—it will help your knife slide right through and not get coated with marshmallow.

Cereal Bars with Cranberries

Nonstick cooking spray

4 tablespoons unsalted butter

1 bag (10 ounces) marshmallows

1/2 teaspoon salt

6 cups toasted oat cereal

1 cup dried cranberries

In a large saucepan, melt butter over medium heat. Add marshmallows and salt, stirring until the marshmallows are melted. Remove from heat and stir in cereal and cranberries.

Immediately transfer mixture into a 10×15-inch baking sheeting lined with waxed paper and coated with nonstick cooking spray. Let cool about an hour and cut into bars.
