Cherry and Goat Cheese White Pizza

We’re starting to get back into the swing of things in the May house. It’s been a rough couple of weeks—filled with tears, goodbyes and long car rides. I will be forever thankful I was able to have my grandpa for nearly 27 years. My grandpa was the kind of man that could make you smile instantaneously and did so liberally. He gave the perfect hugs and always smelled so perfectly like grandpa.

I miss him more than words can say.

Now that we’re home, it’s time to start back up. And what’s better than pizza? Not a lot in my book. I particularly enjoy pizza with fruit on it. Pretty much any fruit—it really doesn’t matter the kind.

This pizza is inspired by one of my favorite white pizzas. I like to grill the dough first to ensure it is perfectly crispy. The mozzarella base is perfect and the goat cheese is a great tangy compliment to the dried cherries. I like to finish it with a little crumbled bacon and a drizzling of reduced balsamic vinegar.

Cherry and Goat Cheese White Pizza

Trader Joe’s Wheat Pizza Dough

Grated Mozzarella Cheese

Goat Cheese

Dried Cherries

Crumbled Bacon

Crushed Hazelnuts

Reduced Balsamic Vinegar

Preheat the oven to 400°F. Roll out the dough (I like to make two separate pizzas) and place on a preheated grill for about 5 minutes.

Evenly distribute mozzarella cheese all over the dough. Add dollops of goat cheese and sprinkle dried cherries, crumbled bacon and crushed hazelnuts. Bake for approximately 10-15 minutes. Drizzle with reduced balsamic vinegar.
