Chewy Chocolate Chip Cookies

My grandpa has recently been in the hospital and I wanted to send something to brighten his day. Like me, he enjoys the sweeter things in life and chocolate chip cookies seemed like the natural choice.

I was also recently turned onto the idea of adding a box of pudding mix to cookies (thanks PDX Food Love) and wanted to give it a go.

So with the stars aligned, I made a batch of chocolate chip cookies.

These are seriously the best chocolate chip cookies ever. They are soft. Really, truly soft. I am reminded of the Chewy Chips Ahoy brand—but without the overly processed taste. This may be one of my new favorite recipes.

Chewy Chocolate Chip Cookies

1 cup unsalted butter, at room temperature
3/4 cup brown sugar
1/4 cup granulated sugar
3.4 oz. package vanilla instant pudding mix
2 large eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups semi-sweet chocolate chips

Preheat over to 350°F.

Beat together sugars and butter until creamy. Add in the pudding mix, eggs and vanilla. In a separate bowl, mix together the flour, baking soda and salt. With you mixer on medium speed, add the dry ingredients to the butter/sugar mixture and mix until just combined. Stir in the chocolate chips.

Drop cookie dough by rounded tablespoons onto baking sheet lined with parchment paper or silicone mat. Bake for 10-12 minutes, or until just set.
