Crispy and Buttery Waffles

It seems like I’m always in search for the absolute perfect waffle. One that would make Lesley Knope proud (and then she might want to be my friend).

This is that waffle.


They’re crispy and buttery. Light and moist. Simple and satisfying.

I really wish I was eating one right at this moment.

Crispy and Buttery Waffles

1 1/2 cups all-purpose flour

2 teaspoons sugar

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 egg

1 cup buttermilk

1/3 cup plain Greek yogurt

5 tablespoons unsalted butter, melted

Begin by whisking the flour, sugar, baking powder and soda in a medium sized bowl. In a separate bowl, whisk together the remaining ingredients. Gently stir the buttermilk mixture with the flour mixture (be careful to not over mix).

Scoop a few tablespoons of the batter onto a pre-heater waffle iron and cook until golden brown. Serve with butter and pure maple syrup.
