Easy Blueberry and Pecan Baked Oatmeal

You know what’s great? Breakfast!

Aaron and I really, really love breakfast. We also really, really like to sleep in. So, we turn to breakfast for dinner, or brinner, on a regular basis.

After our trip, I was looking for an easy dinner. I wanted something that I could throw together and walk away. I also needed to have the ingredients on hand because a trip to the store seemed like too much. This is exactly that recipe.

It turned out a little sweet—but please do not read that as a complaint. I thoroughly enjoy a sweet, fruity oatmeal. Pair it with a salty piece of bacon and it’s perfection.

Blueberry and Pecan Baked Oatmeal 

2 cups uncooked quick-cooking oats

1/2 cup packed brown sugar

1/3 cup dried blueberries

1 tablespoon chopped pecans

1 teaspoon baking powder

1 1/2 cups fat-free milk

1/2 cup applesauce

2 tablespoons melted butter

1 egg

Preheat oven to 375°F.

Combine first five ingredients in a medium bowl. Combine remaining ingredients in separate bowl. Add the milk mixture to oat mixture and stir well. Pour combined mixture into a square baking dish. Bake for 20 minutes.

Serve warm.
