Grilling vegetables is always a great option. Now that spring is here, I foresee much more of this—and asparagus was the perfect way to get started.
I really enjoy the simplicity of grilling vegetables, too. All I added to the asparagus was a little olive oil, salt, pepper and lemon zest. I decided to spice it up a little with a garlic aioli (much like Burgerville does with their fried asparagus).
Grilled Asparagus
A bunch of asparagus, cleaned and trimmed
1-2 teaspoons olive oil
1 teaspoon freshly ground pepper
½ teaspoon salt
Sprinkling of lemon zest
Start by combining the above ingredients in a zip-lock bag. Massage the asparagus in the bag to ensure each piece is well coated. Place on a heated grill and grill until desired doneness is achieved.
Garlic Aioli
3/4 cup mayonnaise
3 garlic cloves, minced
2 1/2 tablespoons fresh lemon juice
3/4 teaspoon salt
1/2 teaspoon freshly ground pepper
Combine the above ingredients, cover and refrigerate at least 30 minutes prior to serving.
