Grilled Chicken Sandwich with Roasted Tomatoes and Feta

Lately, I’ve been experimenting with roasted tomatoes. And yesterday, I came up with this beauty of a sandwich. It’s simple, flavorful and delicious.

Really, it all came together pretty seamlessly. We already had a batch of roasted tomatoes, so all I really needed to do was grill the chicken. When I’m in a hurry or just a little lazy, I use Trader Joe’s 21 Seasoning Salute. It’s a great to-go seasoning mix.

Trader Joe’s Reduced Balsamic Glaze is also great to have on hand. It works really well on just about anything—bread, salads, fruits, sandwiches, etc.

Now, let’s talk about the sandwich. It’s seriously good. It’s so good that I ate another one for breakfast. Everything comes together so wonderfully. The sweetness of the roasted tomatoes, the salt from the feta, the tartness from the balsamic—all on a seasoned, grilled piece of chicken. There’s no going wrong here.

Grilled Chicken Sandwich with Roasted Tomatoes and Feta

Ingredients:
1 chicken breast, divided into sandwichable pieces with Trader Joe’s 21 Seasoning Salute sprinkled on both sides and grilled
Roasted tomatoes
Feta crumbles
Balsamic glaze
Buns

Directions:
Using the above ingredients, assemble your sandwich.
