Homemade Strawberry Syrup and Italian Sodas

It’s been a whirlwind weekend. Little sister, Mollie, is here visiting. While she’s busy cooking up a baby in her belly, I’ve been busy in the kitchen. There’s a definite chance she’s tired of me pushing food at her.

With strawberries beginning to show up in stores, I’ve been contemplating making something delicious. I thought about muffins, cookies and pies. But then I noticed our huge pack of seltzer water. It was pretty clear that the strawberries were destined to become homemade strawberry syrup for Italian sodas.

Aaron and Mollie agreed on the tastiness of the drink. Aaron particularly liked the freshness of the strawberries. I liked that I could pronounce all of the ingredients.

Strawberry Syrup

1 cup sugar

1 cup water

2 cups strawberries, sliced

Combine the sugar and water in a saucepan and heat until the sugar has dissolved. Add sliced strawberries to sugar mixture and cook approximately 20 minutes. Be sure to stir frequently to prevent overflow.

Strain strawberry mixture through a strainer lined with cheesecloth. Squeeze the cheesecloth to collect all of the strawberry juices.

Pour syrup into a container of your choice and refrigerate.

Strawberry Italian Sodas

1/4 cups homemade strawberry syrup

1 cup seltzer water

2 tablespoons cream (optional)

Combine the above ingredients over ice and gently stir. You can also top with whipped cream.
