Oatmeal, Coconut and Chocolate Chip Cookies

Sometimes you just need a good cookie. One you can throw in your purse or backpack and nibble on when you’re at a loss for lunch or just need a little snack. And these cookies completely fit the bill. They’re also pretty darn fantastic—especially just out of the oven with the chocolate still a little melty.

Oh, or dipped in a cold glass of milk.

Here’s what you should know about these cookies: The oatmeal and coconut in these little guys give them a nice, hearty and naturally sweet base. While the touch of chocolate chips makes them feel deliciously decadent. It’s also difficult to not eat them all in one sitting. You’ve been warned.


Oatmeal, Coconut and Chocolate Chip Cookies

1/2 cup butter at room temperature

1/2 cup granulated sugar

1/2 cup brown sugar

1 egg

1 teaspoon vanilla

1/2 teaspoon salt

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 1/4 cups flour

1 cup oatmeal

1/2 cup coconut

1/3 cup chocolate chips

Begin by creaming together the butter, sugars, egg and vanilla. In a separate bowl, whisk together the dry ingredients (minus the chocolate chips). Gradually mix the dry ingredients with the butter mixture. Stir in the chocolate chips.

Using a tablespoon scoop, scoop cookie dough onto a baking sheet.

Bake at 375°F for about 10 minutes. Let cool on a wire rack.
