Spinach and Feta Turkey Burgers with Mayo Pesto

I made these burgers a few nights ago and they were a definite hit. A big enough hit that Aaron sent me a text the next day to say (again) how much he liked them. And the following day, too, when he had the last one for lunch.

That’s some serious success.

Aaron and I really like turkey burgers and often turn to them in a pinch. I had been contemplating spicing them up a bit and this is what came about. They are really flavorful and sometimes you bite into the perfect, gooey cheese vein. The spinach adds a little color and is a nice compliment to the cheese and garlic.

Spinach and Feta Turkey Burgers with Mayo Pesto

1 regular sizes package of ground turkey

2-3 handfuls of fresh spinach, coarsely chopped

1/2 onion, chopped

1 teaspoon butter

2-3 garlic cloves, minced

2/3 cup feta, cubed (1/4 inch cubes)

1 egg

1 teaspoon basil

Salt and freshly ground pepper

Begin by sautéing the onion in the butter over medium heat. You want it to get translucent and a little brown. Add the spinach and cook until wilted. Let the mixture cool.

Gently mix the spinach combination and remaining ingredients. Try not to go overboard on the mixing—you want to have nice chunks of cheese speckling the burgers. Divide into four equal parts and form into patties.

Grill until internal temperature reaches 170°F.

We served our burgers on thin buns with lettuce, tomato and pesto mayo. The pesto mayo is super easy; simply mix together a spoonful of mayo with a spoonful of pesto.
