Spring Strawberry and Spinach Salad

Aaron and I have been traveling a lot recently. Unfortunately, our travels plans were derailed in Dallas. We ended up with cancelled flights due to tornados—we were actually there when they closed the airport. Because of this, we ended up with an impromptu visit to Texas and an unexpected meeting with Aaron’s dad.

When we finally got home (via Seattle and a rental car), I was looking for a quick and easy dinner. Something a little lighter and healthier than the burgers and fries that had been sustaining us.

Salad seemed like the perfect choice.

A strawberry and spinach salad always feels like the start to spring. The strawberries, dried cranberries and poppy seed dressing add a delicious amount of sweetness. The crunchy hazelnuts and warm chicken balance out the savory side.

Not to mention, it’s wonderfully easy to throw together.

Baby Spinach

Sliced Strawberries

Dried Cranberries


Cubed, Cooked Chicken

Simply toss together the desired amounts and finish with your choice of salad dressing (I like poppy seed dressing, personally). This is also really great served with a simple grilled bread.
