First, it’s a weirdly beautiful day in the Pacific Northwest—something we are definitely not used to. It’s bright, sunny and only a shadow of winter crispness is in the air. Aaron and I spent the morning playing tennis in the sunshine. We’re not awesome and a lot out of practice, but it’s still fun.
A light lunch is absolutely what we were looking for when we got home. So, here is a continuation on my yogurt cheese adventure. These little bites are crisp from the cucumbers, tart from the yogurt cheese and a touch of sweet from the sun dried tomatoes and pesto. Better yet, there are fantastically simple.
Italian Cucumber Yogurt Cheese Bites
1 cucumber, peeled and sliced
1 cup yogurt cheese
1 tablespoon pesto
1/4 cup sun dried tomatoes, diced
Mix together the yogurt cheese, pesto and sun dried tomatoes. Spoon the mixture into a small plastic bag (I fit a basic frosting tip in a slit in the corner of the bag). Add a dollop of the mixture on to each of the slices of cucumbers.
