In my attempts to use up the last of our cherry bounty, I decided to make something a little different.
And so a Cherry BBQ Sauce was born.
It’s a mixture of sweet and savory—just the way I like it. Chunks of cherries speckle the sauce and add pockets of sweetness, while the base is tangy with a bite of vinegar.
We mixed the Cherry BBQ Sauce with shredded chicken. It was fantastic. A great, homemade summer meal.
Cherry BBQ Sauce
1 medium onion, chopped
2 tablespoons butter
2 garlic cloves, minced
2 cups fresh sweet cherries, pitted and coarsely chopped
1 cup ketchup
2/3 cup packed brown sugar
1/4 cup cider vinegar
1 tablespoon Worcestershire sauce
2 teaspoons ground mustard
1/2 teaspoon pepper
Start by sautéing the onion in the butter. You will want the onion to get translucent and golden. Add the garlic and continue cooking for only about a minute longer. Stir in the remaining ingredients and cook over medium-low heat for about 20 minutes or until the sauce has thickened.
